ROGUE ESPRESSO

  • For us, a 1:2 ratio works best for Rogue Espresso (that is one part coffee to two parts water).
  • Our favorite Rogue ratio is 18g in and 36g out. Another way to explain this is 18g dry grounds and 36g liquid.
  • To achieve the 36g out, you will want to “stop” the shot when the scale reads approximately 34g.
  • You will also want to time your shots along with weighing them out. We have found that anywhere between 28-32 seconds is ideal for Rogue.

Dialing In

During this process, we're focusing on how grind size affects the taste of the coffee. As you are dialing in, you will need to slowly adjust the grind settings on your grinder in order to achieve the ideal parameters. You can grind your coffee finer or coarser to get the ideal weight and times for your espresso shot.

Adjusting grind settings:

  • Shot pulling too slow: grinds are too fine
  • Shot pulling too quickly: grinds are too coarse
  • NOTE: As you adjust the notches on the grinder it is important to purge the grinder in between shots.

Taste:

  • As stated before, the focus while dialing in is how the espresso tastes. Taste is subjective so don't worry about "getting it right," but ask yourself, "is this taste enjoyable for me?"
  • Some flavors to consider while tasting are acidity, balance, sour, earthy, bitter, fruity, nutty, chocolate, etc.
