In the mountainous state of Chiapas in southern Mexico, nestled within the Triunfo Biosphere Reserve, Café Sierra Azul stands as a dynamic coffee cooperative comprised of approximately 200 smallholder farmers. The breathtaking landscapes and unparalleled biodiversity of the El Triunfo Biosphere Reserve sets the stage for thriving farms, healthy ecological symbiosis, and fantastic coffee quality. The name Sierra Azul, meaning Blue Mountains aptly reflects the unique blueish hue that paints the mountain peaks surrounding the coffee farms.
Established in 2010, Café Sierra Azul embarked on a mission to elevate the livelihoods of coffee-growing families within their community while striving for excellence in producing high-quality specialty coffee.
At its core, Sierra Azul remains dedicated in its commitment to enhancing member prosperity and through partnerships Sierra Azul has been able to mitigate the precarious dynamics of local Markets.
Each of the members of Sierra Azul has an individual wet mill on his/her own farm. As an organization, they have protocols and parameters in place to ensure that the coffee cherries being picked are at optimal maturity. Once the cherries are picked, they are floated in water to remove the lower-density cherries, and then they are hand sorted. The cherries are then de-pulped at each farm, fermented in tanks, and washed before they are finally dried on raised beds mostly in the shade. By slowly drying on raised beds, the coffee benefits from having continuous, delicate airflow. By mostly avoiding direct sunlight, the coffee is protected from being damaged by excessively hot temperatures. This dedicated approach guarantees a high-quality coffee that tells the story of its careful journey from farm to cup.

We roast Monday - Wednesday and ship USPS priority. Orders placed after 7am on Wednesday will be filled immediately if we have the coffee on hand. Otherwise, your order will be roasted & shipped the following week.
