Third-generation coffee farmer Josué Ariel is shaping the future of Honduran coffee from his farm, Finca Las Flores, in the San Sebastian region of Comayagua, Honduras. What began as a family tradition has become a platform for innovation - a place where new methods, varieties, and ideas take root. 

At 1,650 meters above sea level, Josué cultivates a handful of coffee varieties across 4.9 hectares of land in the village of La Penita, Honduras. This particular microlot -  made up of naturally processed Catuai and Lempira varieties that are dried slowly on solar beds and nylon - is recognized for its honey and fruit aromas balanced by a lasting juicy body. 

Continuous improvement drives every decision at Finca Las Flores. Josué has upgraded his fermentation systems and added dedicated drying spaces for natural coffee. His goal is to diversify profiles while maintaining consistency - offering coffees that reflect both precision and pride in his growing specialty coffee offerings. 

That mindset now extends beyond his own farm. This year, his siblings Lila and Nestor joined him in producing specialty microlots, creating a shared vision rooted in craftsmanship, education, and opportunity. Together, they’re building a family legacy that looks forward - one defined by quality, collaboration, and a belief that coffee can change what’s possible for small producers across Honduras.

This coffee is an invitation to slow down, to stay curious, and to experience what’s possible when craftsmanship leads the way.
