When coffee is processed, it goes through several stages to remove the fruit and dry the seeds before export. During the fermentation stage the freshly hulled coffee seeds are allowed to soak in water tanks to remove any clinging fruit. Natural yeasts drift in and munch on the remaining sugars, which break down the fruit — fermentation! As part of an experiment by our sourcing partners, this coffee's fermentation time was extended to contribute more fruit complexity to the cup.
