When coffee is 'processed' at origin, it goes through several stages of preparation to remove the fruit and dry the seeds before export. During the fermentation stage of the washing process, freshly hulled coffee seeds are allowed to soak in water tanks to remove any clinging fruit. Natural yeasts drift in and munch on the remaining sugars which breaks down the fruit— fermentation! (Science!)
As part of an experiment by our sourcing partners, this coffee's fermentation time was extended to contribute more fruit complexity to the cup. Expect flavors of blood orange and cherry layered on a full body reminiscent of nougat.
We roast on Monday and Tuesday and ship USPS priority. Orders placed after Tuesday will be filled immediately if we have the coffee on hand. Otherwise, your order will be roasted & shipped the following week.
